Recipe: Easy Peasy Satay Sauce

Here’s a happy accident to report. I toasted bread to make a PB & J sandwich; I slathered a slice with creamy peanut butter and a jar of what I thought was home-made strawberry preserve from a friend’s mother. It wasn’t at all what I expected, but after the first bite I liked the flavor explosion a lot—I had literally just stumbled onto instant Thai Satay Sauce. Waste not, want not—I sliced up some leftover grilled chicken and mixed up a more balanced sauce:

Easy Peasy Satay Sauce 
Mix all these ingredients well, set aside for five minutes and serve with your meal.
• 1 tbsp ssmajang sauce
• 1 tbsp creamy peanut butter
• 1 tsp rice vinegar
• 1/2 tsp honey (optional)

I generously slathered it onto fresh Romaine lettuce leaf and wrapped the chicken, slapped that baby between bread and BOOM—chicken satay sandwich. Accidents rarely taste this good.
